Chicken Bundles

One of the all-time most requested meals from my kitchen – chicken bundles. In fact, the last time I made these, my husband mentioned that he could eat these every meal and be happy. I’m going to credit that statement to the fact that this is a fantastic recipe and NOT consider that it’s the only meal I make well. I’m pretty sure that’s the case.

In any case, a dear friend of mine (if you are her and you’re reading this, please leave a comment!) shared this with me many, many years ago and they are now a staple in my menu planning. These are pretty quick and easy and the ingredients are common. You may have everything you need on hand. Here’s how it goes:

Ingredients:

Bundles

4 oz. cream cheese, softened

2 TBSP butter, softened

1 tsp onion flakes

2 TBSP milk

10 oz. canned chicken

3/4 crushed croutons

2 tubes crescent rolls

Sauce

1 can cream of chicken soup

1/2 cup sour cream

1/3 cup milk

Heat oven to 350°.

Here are a few notes about the ingredients. Sometimes I leave the butter out, for no other reason than I don’t really read the recipe anymore and sometimes I forget. I don’t notice any difference. I usually use cheese garlic croutons and skip the onion flakes. It is tasty either way. The amount of chicken is about one large chicken breast, cooked and shredded. This recipe is a great reason to freeze some shredded chicken that is extra from another meal. It is easier to buy the cans but definitely more cost-effective to cook your own. If it helps, I have several more recipes in the near future that use shredded chicken, so if you do cook and shred a big batch and freeze smaller portions, there will be several ways to use it in the coming weeks.

So lets put these together. SO. EASY. Mix first six ingredients together. Plop about a TBSP onto the large end of each crescent roll.

Rolling Chicken Bundles

Roll them up and bake them according to the crescent rolls package directions. Another note – a couple of times, instead of rolling them, I spread one package of crescents out in a sheet on a baking pan, spread the filling over that, then laid the second package of crescents on top. I thought it tasted the same, but my kids revolted. They prefer the bundles.

While the bundles are baking, heat the sauce ingredients together until just boiling. Pour over the bundles when serving. We have found that we prefer to have peas with these – they are yummy in the sauce. Also, IF you have any leftover, which is not likely, I like to eat them right out of the fridge – kinda like a chicken salad sandwich. This is a recipe that is easy to add a little of this or that to suit your taste; maybe some shredded cheddar or a little cumin or oregano – you get the idea.
