Nailed It: Volume I – Featuring Desserts

In case I’ve failed to mention it to this point – I am a Pinterest junkie. I guess it helps that I am a cooking-baking-crafting-gardening-decorating-shoe junkie. So, despite the fact that I already possess enough recipes to never cook the same thing twice as long as I live, I continue to peruse Pinterest for new things to try. For the most part, I’ve been pretty happy with the results – and a couple of these recipes are over-the-top delicious!pinterest desserts

In the spirit of sharing – this is the first Nailed It – a collection of recipes from Pinterest, tested and tried in my kitchen and approved by the family. The photos for each recipe are the original pin images – consider this a blanket photo credit to the corresponding pinners.

Flourless Peanut Butter Chocolate Chip Cookies  at Parsley, Sage & Sweet. These are fantastic! I have made these several times. The cinnamon peanut butter buttercream filling/frosting is wonderful! This last time, I made just the cookies without the filling (because I planned to make a chocolate cake and use the filling/frosting on it – and I did). The cookies are yummy without the filling, however they are somewhat crumbly. The filling holds them together.

Chocolate Chip Peanut Butter Oatmeal Cookies at Averie Cooks. I have also made these several times! This is our substitute for the traditional chocolate chip cookie, as my husband does not like the traditionals. (What?)

 

Mixed Berries Buttermilk Cake at Seeded at the Table. I had been making a lot of cookies, cakes, bars and cupcakes with heavier flavors and was craving something different. I had a few bags of frozen fruit in the freezer. My search netted this recipe and IT. IS. FANTASTIC.

The Ultimate Chocolate Cupcake at Sprinkle Some Sugar. This is without question the best chocolate cupcake I have ever tasted. (And I have tasted a lot.)

Easy Pineapple Orange Layer Cake at Lets Dish. Oh yum – very light and moist. The flavors were perfectly blended – not heavy at all. I made this for my husband. He loves the orange pineapple flavor combination. I am a lot more finicky when it comes to pineapple-flavored things so I was skeptical. I had another dessert lined up for me in case I was not a fan of this one. I was pleasantly surprised. I think I ate more of it than he did. The only thing I may change in the future is the use of the box mix. I don’t normally use boxed mixes so I’m sure I’ll be concocting a scratch version. I’ll keep you posted.

Root Beer Float Ice Cream Cake at Taste and Tell Blog on Blogher. This was delicious and refreshing. I do suggest, since it is stored in the freezer, that you make it for a small crowd to avoid long-term leftover status.

Toffee, Peanut Butter and Caramel Cookie Bars at Hugs & Cookies xoxo. Oh.My.Gosh. These are extra delicious. And extra rich. We gave half the pan to the neighbors and it still took us over a week to eat them. Amazing. And rich!

    A yellow cake takes :

    2 cups all purpose flour*
    1 1/2 cups sugar
    1/2 cup shortening
    1 cup milk**
    3 1/2 teaspoons baking powder
    1 teaspoon salt
    1 teaspoon vanilla
    3 eggs

    *If using self-rising flour, omit baking powder and salt.

    **Use juice from oranges with enough milk to make 1 cup.
